this place is so awesome, all kinds of saisons, brett beers, table beers, grisette, that sort of thing, my kind of place! they call this a table beer, done with contessa hops which i do not know anything about, new to me in this beer unless ive forgotten, mix of saison yeast and brett in this, but its way less funky than the bottle of table book i brought home from the brewery, which was brett to the max, this is more nuanced, younger maybe, clean still, just light rustic funk with the estery and vinous saison strain, to me this one is much more delicate overall. straw colored brew, high headed in the glass, fizzy too, excited. the nose is awesome, the hops are herbal to me, things like dill, verbena, and white tea come out, while also some kiwi fruit, green melon, and white wine are there with the hops and the saison yeast together. the grist seems simple on this one, white wheat, subtle bready pils malt maybe, dry as a bone. the flavor is fermentation driven but the hops are great too, a light bitterness and floral thing together, sort of loral-esque in this low alcohol beer context, its delicate and distinctive, i really like the hop selection for this style, and the dosing is on point. the saison yeast and the brett play about equal, light funk all the way through, never tart or medicinal or anything, and the esters dont run away with it either. very drinkable beer, dry, low alcohol, fresh. there is a ton of intrigue here too, its fruity, herbal, and vibrant with high effervescence. i love that these guys have found a niche in these styles, i love the mixed yeasts, and overall this is wonderful in high summer. loved it!
