really heady brew, process intensive, a brett saison aged in oak and conditioned on sauvignon blanc juice, loved this one! slightly unremarkable in the glass, denser brassy and wheaty looking without a ton of head after the airy white inch dies back from the bottle pour, but the nose rules, mature wood and brett funk together, still a saison ester, even a vinous element to the ferment, this is bottle conditioned with champagne yeast and thats a real factor here, it collectively hints at mango and peach and then also dessert wine, while also staying fully farmy and old worldy, great mixed fermentation profile, and the oak is fantastic. the grapes are sweet to me, floral and almost to the perfume level of intensity, pineapple and green pear there too. at first i was suspect on this being stronger, but one sip confirms its the right recipe choice. the extra wheat body and almost bready weight is nice alongside the heavy wine grape flavor this packs, and it carries the brett and the oak both through the whole drink, the alcohol is really only minor in the taste too. great maturity on this, yet still a sort of fresh flower brightness and newness. its a touch sweet and long through the finish but i dont mind its staying power. this really is a fine beer and wine coming together, a style space i adore and this stands out as weird and different in a good way. its cool they do bottle pours of so many things here on top of their already extensive draft list. this place is incredible, love all the saisons and funky stuff, and this was a banger overall, incredible grape character, lots of wood, a pletnora of yeast attributes, really solid!
