Our second release from The Cove, Pennon Blonde Wyld Ale.

First fermented in stainless steel in February of 2016, Pennon was passed to neutral red wine barrels that were separately inoculated with different wild yeast and bacteria. Barrels were chosen a year later and then blended and packaged to undergo a final fermentation in the bottle.

Pennon is blonde in color with a flavor profile composed of full-bodied lactic acidity, notes of lemon, white grape, and an over all floral experience.

Dear half acre. Living in the burbs we don't always get your releases, however in the past year you have been sending out your cove wild ales. PLEASE SEND MORE. Thank you. This is another great beer in the series, that dares to do wild with different flairs. Murky golden yellow pour with a lacy white cap that slowly fades away. Smell has strawberry and vine, red wine, peach, grape, lemon zest, pilsner like malt, green apple, slight horse blanket funk, and lacto. All bright and light but very expressive. Taste follows the nose, more funk and fruit tartness, capture the wild sense within the fruits. More oak here too. Feel is rewardingly crisp finish for the style, has some acid bite but not overwhelming, good tartness and wild feel through out. Could be a little dryer however

Pale bright gold, a little haze in suspension. Ample foam and drippy lace.

Fruity and oaky aroma, some grape and grains.
Taste is all lemon and white grape, tiny bit of earthy funk to balance.
Dry, crisp and tart. Quenching and light bodied, ample carb.
Lean and easygoing, could use a little more depth, but it’s pretty solid.

Sample at Mikkeller Beer Celebration Copenhagen 2018, Blue Session. Pale peach skin color. Aroma has yeast funk, some brett and unripe stonefruits. Taste is tart with some fruit pit bitterness and almond notes on the finish.

Enjoyed at the Copenhagen Beer Fest. Reviewed from notes.

A - Poured a nice clear golden hue with a solid one finger head that fades to leave light lacing.

S - Aromas of nice funky horse blanket with bright apples and acidity.

T - Taste is similar to the nose. The funk is incredibly pleasant with even more of that nice tart apple flavour.

M - Mouthfeel is brightly carbonated, crisp, clean, tart.

O - Overall this was a very pleasant wild ale. Very nice funk level with good lemons and apple.

Opaque golden in color, bright white head with good retention. Tart, white grape, acidic, citrus, floral. Tart, extremely dry finish. Superb effort by Half Acre.
