Shallow Back Mixed Culture Berliner Weisse was brewed with undermodified barley and wheat and fermented in neutral oak with our house ale yeast and lactobacillus plantarum before being bottle conditioned for three months. Light in color with lemon zest and sage building up to ripe stone fruit, water cracker and white pepper, it has direct but quickly dissipating acid and on overall relaxed presence.

Bubbly golden body with a effervescent white head. Smell features lemon, black pepper, flowers, funk, brett, oak, peach, and cracker malts and yeast. Taste is very similar, only the citrus brought a touch more depth with mostly lemon but some bright grapefruit zest as well. Funk was expressive but not overpowering. Feel was funky, bright, heavily carbonated, and springy.
