Mixed culture beer with fruit, vanilla bean and granola. We spent seven months adding, blending, and tasting our way to this beer. It began as a barrel aged hefeweizen that was refermented on freeze dried blueberries, strawberries and bananas, and conditioned atop Madagascar vanilla beans. Our head chef cooked up 50# of house granola for a final steep (because of honey used in the granola, this beer is not vegan).

So I know I am a sucker for out there beers, but I thought this was an absolutely fun and wild beer! Rusty orange cloudy pour, ring is minimal. On first sniff I get the wild mixed culture typical funks and sour notes, but then upon further sniffs I get a wonderful bouquet of fruit: blueberry, kiwi, strawberry, passion fruit, banana, and lemon with a sweet honey and vanilla topping with floral accents. Taste doesn't need much contemplation as the fruit now pound the palate in a boozy and more so wild way, vanilla crushes the second half in a cooling sensation, wheat and granola are revealed as the vanilla is added to the sip, spon sugar, funk and a kiss of table sugar linger. It is weird but delicious. Feel is full, heavy, yet refreshing, cool, slightly sour and has decent carbonation. Points for originality in our copycat beer bubble
