This beer was fermented with a mixture of wild yeasts, then blended with 25% Gewürztraminer grape juice from the Yakima Valley for a second co-fermentation. Integrating grapes into the beer-making process can land super attractive flavors right at home with more traditional brewing ingredients. As hop farming evolves, notes of pineapple, lychee and white gummy bears naturally find their way into our beers. In this case, Gewürztraminer grapes pull out those same delicious flavors. Add in some funk from the various cultures used in its long fermentation process and you have your hands on a tasty bit of science.
