Blended mixed culture beer with raspberries and Gewurztraminer grapes
Cove Blend 01: Rhythm Systems is an active work in combining contrasting flavors to rest in a more cohesive and balanced final beer. The story began with a saison that was barrel fermented with half a pound per gallon of @mickklugfarm raspberries from the 2018 season. Over the two years spent in oak, the beer took on a jammy and concentrated fruit character with heavy funk. Although the barrel had some wonderful characteristics, it felt too tight, tannic, and reduced to be served on its own. It was blended with just slightly less than equal parts of a foeder beer refermented with gewurztraminer grapes to add bright fruit and liveliness. A balanced acidity with big notes of orange marmalade and balsamic glazed strawberries, Rhythm Systems pairs great with grilled fish and veggies, and parallels flavors of orange wine.⠀

Pours a bright orange with a thin layer of foam that audibly fades in a minute or two. No skim or lacing. Rapid rising carbonation, bright clarity. Aroma has a light lactic funk and fruitiness, raspberries and the grapes which lend fruitiness but are less noticeable. Bracing sourness, a bit of acetic sting, raspberries and white grapes, light dry oak in the aftertaste. Medium bodied, carb level starts high and starts to ebb away in the back half. Overall it's drinkable though i'm not sure i'd get it again.
