473 mL can from the LCBO; dated Mar 19 2021 and served slightly chilled.
Pours a foggy, very pale straw yellow colour, capped off with nearly an inch of soapy, foamy white head that lasts for three minutes or so. By that point, it has been reduced to a frothy collar of suds and a thin, filmy layer on the surface; no lacing to speak of, but it still surpasses my visual expectations for the style. Fairly subtle nose, but it's a pleasing aroma nonetheless - I'm getting crackery wheat and grainy malts, with hints of white grapefruit, melon and gooseberry, as well as a touch of lactic 'gym bag' funkiness.
Not a bad little sour - the lactic sourness is not especially potent, backed by crackery, grainy wheat malts and fruity dry hop flavours reminiscent of lemon, lime and grapefruit citrus. Hints of berries and stone fruit, too, with a melon-y finish followed up by mild lactic acidity and wheatiness persisting into the aftertaste, albeit briefly. Light in body, with rather aggressive carbonation that remains crisp and prickly throughout the course of the glass; refreshing and moderately sessionable.
Final Grade: 3.83, a B+. Prince Eddy's Chiller Instinct is a more-than-serviceable dry hopped sour ale - not particularly sour by my tastes, but featuring a pleasant array of tropical fruit flavours and aromas, courtesy of the Citra cryo hops. A fine example of a beer style that I do not tend to seek out - if you like DH sours or Citra hops in general, this is certainly worth a look, but I wouldn't necessarily go out of my way for it.
