La Bête (lah-BET) marries ferocious strength with champagne-like elegance. Dry, effervescent, & faintly tart, this golden ale evokes a fine sparkling wine while revealing the depth & rustic complexity of a farmhouse Saison. Clear light orange color with a modest white head but lots of champagne like bubbles.
The aroma is grain, cloves, grapes, coriander.
The taste is light caramel malt, cloves, white grapes, coriander, white pepper and alcohol, slightly tart, moderate bitterness, lots of spice.
The body is medium, good fine carbonation, crisp and dry, sippable. Altogether, this is a magnificent piece of work, tasty, unusual, far beyond a normal saison, this one is definitely meant to sip slowly and enjoy, preferably beside a fire on a cool winter night, but I would take this anytime, excellent, not an ordinary beer.
