Grails and Waysigns is an open fermented wheat beer inspired by stories of 19th and 20th century Belgian and French farm beers.
Fermented in an open top oak tank with a mixed culture of yeast including strains appropriated from some of our favorite saisons. Brewed with wheat, pilsner malt, aged and fresh English and German hops, and water from the Cedar River Watershed. This beer was refermented to condition in the bottle.
2018 blend: After primary fermentation it was aged in white wine barrels until ready.
2019 blend: After primary fermentation it was aged in neutral oak until ready.

750 mL bottle. Mostly clear with an ample white head. Smells of oak, spicy and grassy hops, and lots of barnyard funky yeast. Tastes of lots of oak, grassy hops, light dough, and a very light lemon tartness. Light body, but maintains its classic Floodland texture. Soft, never abrasive, and doesn't feel watery in any way. Simple and very nice.

Beautiful beer. Lemon yellow body; moderate haze; great head production, good retention.
Lots of light citrus on the nose, blending with honey, straw, wild flowers, oak, mild-to-moderate sourness, and a noticeable rustic funk.
Sharp, funky, and oaky right off the bat, eventually giving way to notes of lemon, honey, and hibiscus. Cracker and wheat. Fairly sour off the bat, but it's more of a funky sour than fruit or vinegar. Funky notes of earth and mushroom.
Light and delicate on the palate, but still a fairly slow sipper due to the pungency and sourness. Wonderful beer.
