This beer was created using 2021 harvest yuzu citrus macerated with single tank foudre fermented and aged spelt saison. The beer was hopped entirely with whole flowers from Washington and Germany and fermented with a mixed culture of appropriated and ambient strains. Refermented to condition in the bottle with organic cane sugar.

Had on tap. Murky yellow pour with a finger of bright white foam. Yuzu obviously leads the nose with flowers, citrus zest and a kiss of funk. Taste has almost juicy yuzu with a mixed culture playful funk, but then has huge yet airy floral notes that pair wonderfully, citrus zest, a kiss of brett, and peach skins. Feel is bright yet soft and floral, wild nature emerges the more you have of it. Reminds me of an afterthought but with less yeast and more flowers
