This beer was created using 2020 harvest 'Shiro' plums grown organically at Filaree Fruit in Okanogan, Washington.
This beer represents the harvest of a single old plum tree. The plums were refermented on a blend of barrel fermented and aged mixed culture beers made from barley, spelt, and wheat.
Thanks to JC for continuing to trust us with his fruit. Refermented to condition in the bottle with raw Washington honey.

Exceptional. Unfiltered yellow body. Distinct plum flavor with a very mild acetic acidity that belies what one would expect of typical stonefruit saison. Crisp lemon and a dab of leather. A slight white vinous dryness. Medium body and carb. Approachable.
