Ale Fermented in Oak
Everything Is Fire is a blend of oak fermented wheat saison refermented on raw honey and aged on Riesling grape skins.
The 2020-2021 harvest blend was created from well aged mixed culture saison brewed with organic wheat from Oregon and organic malted barley from Hedlin Farms in La Conner. This blend underwent a very slow refermentation on raw 2020 harvest Star Thistle and Knapweed honey from Ellensburg, after which it was further aged and macerated on pressed Riesling grapes from Red Willow Vineyard in the Yakima Valley.
This beer was refermented to condition in the bottle with raw Washington honey.

As its bright white head slowly condensed to a creamy blanket and ridged collar, I at first thought this nearly fully opaque corn milk yellow brew was an NEIPA. Still, it has an enticing glow to it.
Softly fluffy up front, a hard, rindy, nutty, funky cheese meets a hint of herbal expression and a tree fruit tartness bolstered by a touch of shortbread far in the background before coming to a paper dry finish.
This exhibited far more saison depth than I was expecting.
