Chimacum Valley (2021/2022)

This beer was created using 2021 and 2022 harvest raw spelt grown organically by Keith Kisler and Family in the Chimacum Valley on the Olympic Peninsula. In Late 2021 we brewed Saison w/ the spelt and a variety of organic barley. The beer fermented and further aged in barrel for over a year before blending w/ an equal portion of young beer brewed w/ 2022 spelt. This beer is an attempt to showcase the work done at Chimacum Valley Grainery. Refermented to condition in the bottle w/ the residual sugar from the young beer.
