This beer was created with a blend of spelt saison fermented and aged on second use organic plums and pluots. This vintage includes six varieties of organic red plums and pluots from Collins Family Orchards and Filaree Fruit. After aging, the beers were blended and then dry hopped. This beer was refermented to condition in the bottle.

Poured from 750mL bottle into my BeerAdvocate teku.
Appearance: lovely golden hue with a moderate haze and two fingers of frothy ivory foam. Looks nice!
Smell: an intoxicating blend of slightly sweet malt, a rich, almost unctuous farmhouse quality, lightly tart fruits, and herbal, earthy hops. What a delightful treat.
Taste: a bit tart up front, and the tartness is neither over the top, nor does it fade. There’s more of a malty flavor here than in the aroma, but it’s balanced well by the fruits. I don’t think I would have guessed plums or pluots, but in any case, they are doing good work here! A slightly earthy, herbal finish rounds out the nicely dynamic flavor. This is a good beer indeed.
Mouthfeel: medium body with a moderate carbonation and creaminess. Not bad, but texture is not what this beer is about.
Overall: this beer is growing on me as I drink it. It’s just plain lovely, and really hitting the spot right now — it suits my palate.
