750ml bottle purchased off the shelf from a local bottle shop. No bottled date.

Look: Started a slow gush of foam upwards as I opened the crown cap, fortunately I was able to immediately pour into a Saison glass. IT has a nice orangish hue with near clarity, effervescent bubbles, and a thin off-white head that is sticking around. Some cloudiness as I refill my glass and more of the sediment is circulated.

Smell: Has an acidic and spicy nose, with lots of lemon character. Herbal notes come out after swirling the glass. Some mild melon and peppery notes. It smells like a typical Saison, nothing especially distinctive or remarkable. Some dank notes are evident after mixing with the sediment.

Taste: It's very tasty. Dry and refreshing with complex flavor. I'm not sure if I would be able to tell that this is dry-hopped with Mosaic, but it has some distinctive features on the finish. Up front, it's bright and acidic with nice lemony and rindy notes. The carbonation is lively and the beer is very light on the palate. The finish is dry, mildly bitter with more citrus notes and some melon flavor. Some medicinal/herbal flavors on the finish build on the palate as I consume more of this. Other fruit flavors are coming out also such as mango and berry flavors. Nice tannic character from the oak barrel aging here; it keeps making you come back for another acidic sip because your palate is getting dried out from the oak tannins. Very nice.

Feel: It's light to medium bodied. The carbonation is very soft and effervescent, evident of very nice mixed fermentation and bottle conditioning. Very refreshing and dry, with a bit of tannic oak character on the finish. You can tell that this is not a regular stainless steel tank beer.

Overall: This is my first Fermentery Form beer. I have been itching to try these guys' beers for a while now, and I was finally able to track some down without having to go directly to the brewery. I think that this is a good introduction to the kind of beers that these guys produce, and I really look forward to trying their other offerings. This is a very nice American Saison / Wild Ale.

Version 12: Dry-hopped with Mosaic

Gestalt is a series of dry-hopped farmhouse ales. We start with a grist similar to Form to Table, but at a slightly stronger ABV, and towards the end of fermentation, add a large amount of a select hop – whatever we’re interested in at the time. The result is a very aromatic beer, that is light and easy to drink, with a refreshing tartness, and just enough bitterness to keep you wanting another glass. 5% ABV.
