Pours a large fizzy foamy 2 finger head with moderate retention, a bit of lacing, slight hazy light golden straw color
Nose nice farmhouse funk saison, spicy phenols with various fruity esters, tree fruit and a hint of citrus, sweet caramelized honey and general floral honey, a bit candy like, vanilla spice, a bit of those fake sugar candy citrus jelly fruits, touch of bubblegum ester that really comes out as it warms, a bit herbal grassy as well
Taste starts with more of the same, herbal doughy grassy straw like base malt, with plenty of spicy peppery phenol notes, a bit of vanilla spice as well, floral rose water, perfumey a bit but not alcohol more the phenols, fruity esters with more pome fruit candied pear maybe, bubblegum, apricot, a touch of candied sweet citrus, more caramelized sweet honey but more background at first, coming through more as it warms and on the back end, a bit of an herbal hop late with some lemon zest and candied fruit, but pretty dry on the finish
Mouth is med bod, a bit creamy soft, higher frothy effervescent carb
Overall quite a nice beer, they let the farmhouse saison speak for itself with some nice honey undertones, saison yeast bringing the biggest additions with malts behind that and honey as well, thankfully hops are just an afterthought, as I was afraid like many American breweries just hop the shit out of a beer like this and destroy the greatness underneath, so kudos for holding back
