Oyster stout is an ode to our name Big Oyster Brewery. Historically, Oyster Stout began in the late 1800s when brewers found out that the shell of an oyster is packed with calcium carbonate, which could be used to purify and improve the beer while brewing. We at Big Oyster are keeping the tradition of Oyster Stout alive by adding our own spin on it to make this beer a rich and roasty sweet stout brewed with locally harvested oysters. Hints of dark chocolate and toasty bread will satisfy even the most sophisticated taste buds.

Black with a thick brown foam, excellent retention, bands of lace
Roasty malt, chocolate, a bit of coffee, some sweet sea air, but that could be my imagination
Nice. Mocha, a bit of caramel and dark fruit, long dry, roasty, briny finish
Medium-heavy body, not cloying at all, appropriately lower carbonation
Really nice, I'd like a little more brininess, but it's good, would definitely prefer more in cooler weather.

Draught pint at The Brass Tap here in Baltimore: NOT normally a fan of oyster stouts, but this one has me rethinking (being a Happy Hour selection didn't hurt). Other than being thinner than I prefer my stouts & porters a solid choice.

Shuck It has a very thick, tan head and a dark brown appearance, with heavy lacing. The aroma is of dark bread crust and coffee. The flavor is of the same elements, with some bitterness and low sweetness. Shuck It has a high-medium body and a mostly-dry finish.

Growler into pint glass. Pours a very dark brown with a brief tan head. Initial impression is roasted malts, a bit of brine, and dark chocolate. Mouthfeel is clean and dry. Finish is slightly bitter. I honestly prefer a little more body and sweetness in a stout, but YMMV.
