Barrel-Fermented French Saison. Our first journey fermenting Oak Barrels, as Saison would traditionally be made. The barrels were allowed to Ferment at ambient temperatures ranging from 50F up to the high 70s producing a complex and luscious beer. Deep Gold with a bouncy white head, notes of black Pepper, Lavender, Melon and a touch of Tannin and Vanilla from the once-were Wine Barrels.
