Copenhagen 6/6 2022. 37,5 corked and caped bottle from Kihoskh, Sønder Boulevard, Kbh. V. Green version of Lambiek Fabriek's usual label design with the Goat Skull in the center.
Pours unclear - almost hazy - golden yellow with a big white head. A bit bubbly. Settles thin but unbroken layer of foam just covering the surface of the beer. Moderate lacing.
Aroma is intense with a sweet fruity odor swiftly dawned in a big and austere tart, sour scent. Green apples with a hint of sweetness, unripe, tart gooseberries. Citrus. Notable touch of vinegar. Searing.
Light carbonation. Sightly thick, oily, soft, smooth, almost silken, lightly tingling texture.
Flavor is fairly intense with a light sweetness followed by a strong, sharp sourness. Aftertaste is sour but with light, redeeming sweet undertone. Lingers for while. Finish is dry.
Stylish, surprisingly smooth, crisp and sharp Lambik from the Fabriek.

Orange colour, dirty, with considerable cloudiness. White foam, high, persistent, leaves no traces on the glass.
Fruity aroma - lots of unripe but also overripe fruit, wild, country, funky, pungent vinegary, fruit stones, woody, and above all very sour.
Sour taste with very minimal sweetness, bitter background and finish. The bitterness is associated with fruit stones and raw wood.
Saturation high, pleasantly refreshing. Body medium upwards. Round texture. Aftertaste long sour with even longer bitterness.

750 ml capped & corked bottle, bottled 07-20, from Vinmonopolet. ABV is 6.2% Golden colour, large white head. Aroma of brettanomyces / farmhouse, catpiss, oak. dust, mould. Very sour and funky flavour, brett galore, notes of oak and lemons.

A 750ml corked and capped bottle, bottled in March 2020. Poured into a 3 Fonteinen gueuze glass.
Appearance: A hazy golden orange colour with a two finger white head that had pretty good retention and eventually settled to a very thin cap, while leaving some nice lacing.
Aroma: Funky, brett, damp wood, musty, dusty, fruity, green apple, grape skin, dried lemon peel.
Taste: Tart, green apple, orange, lemon juice, lemon zest, wood, with some light to moderate funkiness.
Mouthfeel: Medium bodied with moderate to high carbonation.
Overall: Thirst quenching, enjoyable and drinks easy.

750 mL bottle. Lots of bubbles after a loud pop. Settles to an orange body with a few bubbles. Smells of citrus, lots of oak, a little sweetness. Tastes lightly tart with a sour orange flavor. Heavy oak and earthy yeast notes that mellow any acidity. Well carbonated. Nice, even if it falls a little flat compared to other gueuzes.

Bottle: Poured a clear golden color Lambic with a large white foamy head with good retention and some lacing. Aroma of tart notes, oak and strong granny smith notes is quite nice. Taste is a great mix of tart notes with some oak and granny smith notes and funky ester with a dry finish. Body is about average with good carbonation. Great mix of flavours with no acidity and great drinkability.

Bottled 03/2020. Nice clarity, orange, good head and lacing, good carbonation. Aroma is mineral, mild rubber, funk, citrus, Belgium. Citrus orange flavor, peaches, mildly sour, delicious.

First bottling, 2020.
Brilliant gold, racing champagne streamers, ample head of creamy foam and delicate Brussels lace all around the glass. Excellent retention, the foam never breaks the surface. It looks picture perfect. 4.75
Aroma is soft, but there is some funky Brie cheese rind and wet straw from the Brett. “No Brett, No Glory” as the brewery’s motto plainly states, expect this aspect to develop more over time. Light lemony citrus acidity, and mild oak. 4.25
Bright spritzy acidity, puckering lemon, dry oak tannins. Orchard cider apples, sour grapefruit, a hint of balancing bitterness on the back end. In time I would expect this to develop even more complexity. 4.25
Medium bodied an quite effervescent, the creamy texture of the foam is so velvety it’s unreal. Hundreds of tiny bubbles scrub the palate spotless. A natural style pairing with fatty cheese and charcuterie. 4.75
Overall this is another winner from the new generation of lambic producers, and they can only ascend further from here. Highly recommended! 4.5
