Reviewing this way late but I lucked out because it is still so good. If it was going to be nasty because i let it age too long, I was just going to wait until WH #33 came out to review it.
Very pinkish copper-amber, semi-opaque. Head of fluffy, foamy, chunky, well-retaining golden tan. Decent lacing. Aromas of resin, leather, a little gingerbread, and just a pinch of dark or caramelized fruit. Palate definitely has a caramel and slight dark fruit backdrop, but the hops and spices all but overwhelm these, with a burst of dankness, leaf matter, a handful of nondescript winter spices, and extreme peppercorn well before retro-olfaction. Medium to nearly full in body, well-carbonated enough to not seem overly thick, soft suds at first, but prickles by the finish at a standard drinking pace. Mildly astringent.

12 oz bottle, poured into a goblet
Appearance: Pours a beautiful, deep, dark, almost-opaque, mahogany color, speckled with reddish highlights and a half of a finger of white-colored head that quickly dissolved away into a thin lacing of foam that only partially covered the top of the beer.
Aroma: Very aromatic with notes of bready, toasted malt, spices such as clove, cinnamon, dark chocolate and brown sugar, and quite a bit of floral, piney, hops.
Taste: Nice flavors of bready, toasted malt up front, followed by some brown sugar-like sweetness, spices of black pepper, clove, cinnamon, and touches of nutmeg and orange peel, all finished with some nicely balanced, floral, piney hops. Very tasty.
Mouthfeel: Medium-bodied and nicely effervescent as there is quite a bit of carbonation to tickle the taste buds. With an ABV of 6.0%, there is no alcohol on the palate.
Overall: This is quite a good beer. Malty, with nice flavors of spices and beautifully balanced hops. A well-crafted beer. I’d certainly drink it again.

Redhook Winterhook #30
12 oz. brown glass bottle, "BOTTLED ON: SEP 30 14" (8.5 months old)
$1.92 @ Weis Market, Conshohocken, PA
My sample is old and a bit oxidized but I can work around that. It looks good (russet brown body/tan head) and had very good head retention and lacing. The aroma expresses a combination of piney/citrusy/spicy hops and medium dark caramel malts - as does the flavor! I'm not sure if there's an actual bit of spice in here as well, perhaps mace, or a small amount of allspice. Interesting. A median bitterness balances it and it's well rounded (although a fresher example must have had some edges to it). Once warmed it's pretty much right on with what I think of as a "winter warmer". It changes each year but it's good enough that I'll look forward to trying it this coming fall.

Thin and bubbly feel at first. Then washes a smooth malty finish. Tones of cola and spice. Light to medium hop profile. No head. Dark amber, bluish-brown hue. Liked previous years better but worth picking up.

Solid brew for the style. Nice citrus and pine notes.

Poured into a tulip glass.
A: Clear garnet with minimal head and spotty lacing.
S: Cinnamon, malts, toasty, cherries.
T: The spices pop up, featuring cinnamon and nutmeg. Nutty with a slightly metallic finish.
M: Low to medium (watery). Light to medium carbonation.
O: The watery mouthfeel really dummed this one down. A decent warmer, just nothing to shout about.

Drinkin out of the bottle although I did pour into a pint glass to get a look at the color. Pours as a standard amber with little head. Surprised to find a hop flavor on the stronger side as the smell is pretty neutral. Hints of sweetness, coffee or chocolate I'm not sure.
I've always liked Redhook's beers, but haven't ever thought of them as something great. This falls into that same category however, it is probably the best I've had from the brewery so far. Would purchase again.
