Poured from a 750ml (likely bottled within the last week) into a red wine glass with a few cm of frothy white head, which ultimately recedes casually from the center yet clings stoically to the glass' edges. The beer is cloudy and unfiltered, yet bright enough to be translucent. It has a beautiful hue of light orange blossom honey. The nose bursts with vibrant, concentrated fruit essence, including apricot, kumquat, and peach. Its mouthfeel is velvety and medium-full bodied. The taste profile beguiles -- the yeast strain is hard to pin down, so I'll defer to Variant's description of 'Norwegian farmhouse''. It certainly tastes reminiscent of mimosa though is actually more similar to bellini, yet without any of the typical cloying sweetness. Nor is Dream Balloon watered down OJ with a heaping of prosecco: this is all lush, juicy, balanced deliciousness in a glass. The closest facsimile in flavor would be--wait for it--Sugarfina peach bellini gummies. Hands down, the best synthesis of the mimosa sentiment in beer form I've had and I can't imagine another brewery topping it. That may come off as sarcastic praise given the niche style, but I'll go a step further: it's the finest fruited, non-sour, farmhouse ale I've encountered.
