Aeternum Vale, mi amice. This beer was initially fermented using our house sourdough culture, then transferred to our favorite red wine barrel where it was refermented and aged for over a year. Nothing else is required for the journey.

Deep saturated gold, bright clarity, ample foam that dwindles to a thin skim.
Amazing stonefruit aroma, peach and apricot, oaky chardonnay, mildly Bretty, brie rind funk.
Taste is fruity, lemon and apricot, oaky dry finish. Zippy, zesty, and acidic. Balanced, not overly harsh sourness. Light and crisp, supple carbonation.
Overall this was really great! Thanks to Bill for saving the last one at Terra Ferment in Springfield. The brewer is one to watch, she is very talented. A belated RIP to Bearded Owl, we hardly knew ye.
