Collaboration with our friends at Barrel + Beam Brewery in Marquette, MI.
A beer originally brewed in fall 2019 with our Baileys Harbor well water, Pilsner malt, malted and raw wheat, local whole cone hops, locally foraged sumac, and juniper boughs foraged in Michigan by Barrel + Beam. The beer spent a night in our koleschip to naturally cool and inoculate with local microflora, before we transferred it into oak barrels and pitched locally harvested wild yeast. The beer aged in oak barrels for a year and a half, before we blended select barrels together and naturally refermented the beer over many months in the bottle/keg.

Spon saison with juniper and sumac. Taste is slightly acetic with an herbal botanical notes of juniper and sumac, and some lemon juiced oak. Pale gold with bright clarity, a finger of foam, and spotty lace. Mild juniper note in the aroma, oak and perceptible acidity. Overall it's pretty good, though the acetic quality hinders taste and drinkability.
