Buffalo Trace Barrel Aged Dinosaur Chaps

We barrel aged our Dinosaur Chaps for over six months in Buffalo Trace Barrels. At first this was all to be blended with another set of barrels to make a different beer, but following the advice of our Ellipsis Insiders at a private event held for randomly picked attendees, we were convinced this beer needed to be a stand alone offering as well. Big notes of Chocolate, Vanilla and Bourbon blend so well together and at 13.2% this beer came out really smooth.
