Brewed with Indian Ladder Farms Spelt, malted by Hudson Valley Malt. Hopped with Crystal grown at Indian Ladder Farms and NY State grown Cashmere from Chimney Bluff Hoppery. Conditioned for many weeks in our oak Foeder. This is a 100% NY Ingredient beer.

Pale golden pour from a crowler. Superb clarity. Little to no head with very poor retention; it ends up looking like some High Life that's been sitting around for an hour...only up from here. Interesting and complex nose with zesty lemon peel, pepper, faint soursop, guava, and a distinctly wheaty note. A bit of a woody funkiness going on. On the palate, pale cereal base, fluffy and puffed wheat with a slight nuttiness and kiss of honey sweetness. Herbal fruitiness is quite nice with lemongrass, unripe melon, berry. Lemon-lime, herbal grass hides any fruity/hop sweetness, and it does trend toward the sour. Any sweetness is malt derived. Body is light and the feel is medium and a bit oily, and works counter to the dryness of the oak tannin. Crowler filled only 3 days ago, but carbonation is very low.
