something magic about this one, so understated and all, they give no indicatation that its a wild beer, and the way kettle sours have been trending so monotonous and bacterial, i was not that interested, but the basil sold me. turns out its fully open fermented and wild and bretty, a complex little grian base, some super cool but subtle additives, and a neat funky yeast spectrum, really cool beer! the lime and the basil are incredibly natural here, but they are also really restrained, this is refined to a crazy degree, so balanced and real and interesting. the basil is very vegetal and leafy and italian food to me, while the lime cuts it with some zesty acidity and bitterness, but the multigrain base and the funky yeast are what define this one for me. its so neat that this is wild, nobody says anything about that, but this is so far removed from a one dimensional lacto thing, its incredible, woody and bretty and limey and new and mature at the same time and just full of flavor but also delicate and drinkable. gosh these guys are good!
