Usually brown and black IPAs are brewed by adding dark malt to the mash along with all of the other grains. For this beer we cold-steeped a dark German malt overnight as you would cold-brewed coffee. We dosed the resulting liquid into the keg to provide fresh bread and chocolate notes without overwhelming the pineapple-pine aromatics of Simcoe and Citra.

From tasting notes 01/24/19
Had on-tap at Sapwood Cellars in Columbus, MD
Appearance - Served up in a 14oz stemless, hazy and rustic brown in color with a thin, broken layer of suds and a thick ring around the edge of the glass. A few broken lines and spots make up the lacing.
Smell - Catty, slightly piney and a hint of chocolate.
Taste - Follows the nose. Hops employee a mostly catty flavor, while the malts hit with notes of chocolate and also an almost a rye spice character as well. Rye especially comes through in the finish.
Mouthfeel - Medium in body with fair carbonation. Slick, easy drinker with a slightly dry finish.
Overall - What a difference the malt bill can have on the hop profile. While the OG CH#4 was bursting with juicy, tropical flavor, this one becomes more catty as the malts add some chocolate and rye spice. Interesting to see the difference between the sister beer, but not one I'd order again.
