Notes: Our Story
The Mission:
To be true to our community, planet, and selves. Whenever possible using ethically sourced grains, organic hops, local fruit, and free-range yeast. Brewing beers that we want to drink that are reasonably priced, moderate alcohol, and above all delicious. For now, two guys turning their passion for brewing hobbies into brewing careers.

Our Name:
All wood starts as sapwood, the delicate new growth just under a tree’s bark. It plays an integral part of a tree’s maturation by carrying water between the leaves and roots, carefully redistributing built-up reserves as the season’s demand. Eventually, sapwood hardens into the heartwood of which barrels are made. Sapwood ties together the two sides of our production: Sap for the fresh IPAs and Wood for the acidic barrel-aged beers. A cellar is the brewer’s term for the fermentation space but also evokes the cool, quiet resting place of barrels.

Spacious with long bar and lots of tables. Friendly and knowleadgeable staff-very efficient service. Good beers. Decent selection.

Limited food options inside (snacks) but rotating food truck right outside.

Visited mid-afternoon on a Saturday. Spacious with a lot of seating - bar, tables, hightops, and additional standing room at barrels. It was a little more than half full and the noise level was surprisingly low. I love the options for full or half pours and the prices are very reasonable. The bartenders were attentive, helpful, and knowledgeable about the beers. Great place and I look forward to going back.

Brewer owned. Both the brewers had successful careers before moving into brewing. Both are now published authors about brewing beer. Both are passionate about brewing beer and the science of beer. All of this adds up to a brewery that puts out excellent products. Right now they have a small brewery in an office park in a suburban area. I imagine it won't be long before they are forced to move to a larger facility. You want to go to a brewery where the brewers are this knowledgeable and passionate.
