After a quarantine-fueled eternity, we and the fine gentlemen of Sapwood Cellars finally got around to brewing our long-discussed Hazy Double IPA that applies the latest hop science in an effort to create a complex synergy of flavor. Brewed with a bevy of hops (Mosaic Cryo, Idaho 7 Cryo, Columbus Cryo, Riwaka, Strata, + Citra Cryo), and a variety of yeasts/enzymes (ale yeast, nectar yeast from brambleberries, + two enzymes typically used in wine production), Sisyphean Task provides a myriad of fruit flavor—like pineapple and musky passionfruit—without any actual fruit, along with flavors reminiscent of Sauvignon Blanc.
