For some reason we always seem to be adding Simcoe to our IPAs, but rarely to our DIPAs! We wanted to change that by showcasing the intense mango and pine notes of Simcoe and Simcoe Cryo in this beer. Simcoe was the variety that really kicked off the modern American IPA when it was released in 2000, before Citra and Mosaic were introduced a few years later. Here's to Simcoe on its 23rd birthday!

Draft pour into a stemless wine glass at the brewery.
L: Hazy pale yellow pour, white head with medium retention, leaves some lace, head picks up easily with a swirl of the glass.
S: Large Simcoe aroma, pine/pineapple, tropical mango.
T: Same as nose but more fruity and less piney, medium sweet to open, clean moderate bitter finish.
F: Medium-full body, soft and somewhat viscous feel that hardens at towards the finish, tiny bit of tongue prickle.
O: Nice lighter feeling double, the Simcoe hop aroma and flavor is a plus.

Hazy yellow-orange, white head, not much in the way of retention, but nice lacing.
Aromas of passionfruit, pine, grapefruit, mango, dank.
Big passionfruit and pine hop flavor, a bit of cream of wheat.
Medium bodied and appropriately carbonated.
Not a big fan of the NEIPAs, but this is alright.

16 oz can from September, split with two friends. Poured into a wine glass. Okay, so obviously this is well past its prime but you can tell it was a very tasty beer at one point. There is still a good amount of citrus, wheat, and tropical fruit going on, albeit with a stale cardboard background.

If this is Simcoe on display, wow why aren’t more brewers embracing this hop. It’s bursting with mango and adds a richness and punch in moderate bitter as well. Really liked this one.
