Imperial Stout with Dried Chile Peppers, Amburana Wood, Cacao Nibs, and Vanilla Beans Added
An Imperial Stout for the summer? Infused with ancho and guajillo peppers for their dried fruit flavor, and a little bit of heat. The buttery-cinnamon aroma of Brazilian amburana wood balances the chiles. The finish is creamy drinking-chocolate from cacao and vanilla. The base stout is low-bitterness and features chocolate wheat malt to reinforce the Mexican-inspired chocolate flavor.

L: pours a viscous, opaque dark brown/black with a bit of sepia lacing.
S: strong notes of chocolate, toffee, vanilla with a bit of barrel wood and smoked chiles (very subtle).
T: really delicately balanced; this is an imperial stout first and foremost but the slow burn of smoked chiles is unmistakable, particularly as the beer warms closer to room temperature, and also as you get closer to the bottom of the can. The heat is not nearly as distracting as others in this type (New Belgium's Cocoa Mole comes to mind) where the intent seems focused on the fire and not the taste. The ABV is really sneaky here; it didn't feel like or taste like a 10% beer. This is eminently drinkable.
F: perfectly carbonated with a great body, but not too filling.
O: another fantastic offering from Sapwood Cellars who are quickly gaining quite the following in the Baltimore area. I'd gladly buy this again if I could find it and if not, will look forward to whatever is next.
