Three Year Barrel-Aged Blend
Bottle Release 9/24/21
Each year a tree creates a new layer of sapwood under its bark, a growth ring, recording the tree's life. So too we add new oak barrels to our sour program each year, slowly expanding. This blend is a cross-section, with barrels selected from our three years of brewing. The younger barrels provide lemon and mineral vibrancy while the older ones bring oaky depth and earthiness.
Brewed: 2018, 2019 & 2020 - Bottled: 6/2/21
Final pH: 3.09 - Cellar: 5 years
Bottle Count: 1,272 - 1 Pint .9 fl oz/500 mL

375 ml bottle split with a friend, poured into a red wine glass. Pours a pale yellow with a medium head and nice lacing. Aroma and flavor feature tart golden ale, oak tannins, leather funk, citrus hops, and hints of grains of paradise and sour green apple. Lots of funk; something a little bit odd with the spice, without which the beer would be better off and even more outstanding. Mouthfeel is dry and well-carbonated. Overall a great oak-aged non-fruited sour.
