Brewed with Phantasm (New Zealand Sauvignon Blanc powder), then soured in Sauvignon Blanc barrels with a house culture from our friends at Bissell Brothers (Portland, ME). Finally, refermented on 300 lbs. of Maryland Chardonnay grapes.

Poured from the bottle into a tulip glass. Brewed 10/18/2021. Bottled 11/1/2022. Collaboration with Bissel Brothers.

Opaque with an excellent glowing yellow peach and pineapple fruit like color. Light and fine creamy half finger head of real nice white, giving an excellent collared ring when settled. Snowy fine white carbonation through the glass giving a great appearance.

Delicious aroma. Musty sensing with hints of white grape and faint oak in the distance. Comes off sensing a little wet, but some real nice spicy hop overtones of sage and yeast like peppery esters. Kind of has a bit of white pepper heat to it as well.

Fun palate. Prickly sensing mouthfeel, with big saison like earthy and rich flavors. However, light balance and basic malt depth gives for fleeting flavors. Still the wine flavors seem a bit muted, going to more of a classic saison earth and pepper flavor of classics. Minimal finish with a good amount of funk, and surprisingly little barrel hinting flavor or roundness to take in, and a faint touch of lemon for good measure.

Comes off more like a nice tasting saison hybrid of sorts, but leaving behind much classic barrel and wine character in the middle you could say.
