We brewed our Tripel using Belgian Pilsner malt and hopped with English Goldings and German Saphir. We combined two monastic strains for restrained fruit (banana and orange) and spice (pepper and clove). One reason that Belgium has a tradition of stronger beers is that until 1984 bars and restaurants couldn't serve distilled spirits. Despite the strength, this beer is easy to drink thanks to a crisp finish and restrained bitterness.

16oz can. Foggy golden pour, fizzy head leaves slight ring. Grainy, fruity aroma, yeasty notes, sourdough. Taste has very faint citric notes, bready, yeasty, with some very mellow zesty accents. Creamy feel.

Can from Sapwood. Nice American take of classic Belgian style. Flavor true with cloves, banana, malt floor. Nice aroma. Rich yeast threads throughout nose and palate. Spot on. Poured a huge if not creamy white head. Quick dissipation with lingering surface foam and halo. Pale yellow body. Less carbonated than expected from can; but for me less is often best…and enjoyed. A bit heavy in body for me but so are many Belgian tripels. Not syrupy. Overall I thought it was nice thoughtful take on a world classic style. Would match this with a Flemish meal next time.

From a can poured into a tall Hefeweizen glass.
A translucent golden color, with a substantial head with that fades to a foamy ring.
The toasted Pilsner malt flavor adds some dimension to the flavor. The fruity citrus/banana and clove are accompanied with white pepper notes.

Draft pour at the brewery.

L: Mostly clear, yellow lively pour, 1/2” white head, creamy foam persists a while before backing down to a collar, streaks and specks of lace.
S: Spicy Belgian yeast aroma.
T: Yeast flavor (subtle orange, banana and spice) over cracker malt.
F: Moderately carbonated medium-weight body, smooth start, works up a small tongue bite, slightly warming.
O: Solid plus.

Slightly cloudy deep gold, small white head, poor retention, thin rings of lace
Orange, banana, pepper, clove, sweet, bready malt aroma.
Pepper comes on the palette first, then fruitiness, then the sweet malt.
Medium light bodied, could use more carbonation
Not my favorite tripel
