We swapped the wheat malt in our usual pale ale recipe for spelt. It's a high-protein cousin to wheat that adds body and a slightly rustic graininess. We leaned into that with Southern Cross, a New Zealand variety with apricot and spicy pine. Balanced by the tropical fruit and peach of American Vista.

16 ounce can poured into a Spiegelau wheat beer glass.
CANNED ON 4/17/24
L: Hazy (almost opaque) yellow-gold pour, one inch white creamy head, persistent foam leaves a little lacing.
S: Strong to open, somewhat juicy citrus/mango nose.
T: Hoppy, not juicy but like the nose, citrus and mango, hints of apricot, bread flour malt flavor,
F: Medium-ish body, high carbonation for a crisp over creamy feel, clean finish.
O: Very nice APA, better from the can I think, easy drinking summer hazy pale.
