The idea for this beer has changed a few times, but we got there eventually! It's a hoppier take on a Belgian beer, but it isn't a Belgian IPA. It has a little extra body to support the hops from wheat and oats. Then we added a base of citrusy-herbal Saphir hops in the whirlpool. Followed by some wonderfully fruity-spicy notes from a Belgian strain. Finally a light dry hopping with American Amarillo for stone-fruit notes.

Excellent Belgian pale ale. As Clovis as the best from Belgium I’ve had. Such a nice balance of the yeasty eaters with the hops. Not overly yeasty though so it’s quite refreshing and drinkable. At 6.4% it’s full bodied as well and not watery or too light. Just strikes the right balance.

Draft pour at the brewery.
L: Apple juice-like lightly hazy golden pour, 1 finger white head, dense creamy foam leaves fine lace.
S: Low strength nose, weak bubblegum, hints of spice.
T: Dry with only hints of sweetness, spent bubblegum yeast flavor, wheat and grainy malt, spicy/floral hops.
F: Medium body, subtle moderate carbonation, just enough to give some edge to the overall creamy feel.
O: Decent Belgian pale, sharp and refreshing.
