Pale Ale DDH with Galaxy and Simcoe
Mike's first homebrewed NEIPA back in 2015 was dry-hopped with Galaxy and Simcoe. They are two of our most-used varieties and yet it took us until the original batch of this recipe in 2021 to combine them at Sapwood! The combination is super-tropical with the mango notes of Simcoe blending with the passionfruit of Galaxy. The hops lay in a soft bed of barley, oats, and wheat. A little extra-juicy thanks to a strain that produces beautiful apricot notes.

Can from Sapwood. Nothing particularly stand out. Always enjoy Galaxy and Simcoe….alone or together. I thought it was a more Tropical /Galaxy than Simcoe influenced. So it came across a bit like way more than a few Galaxy fwd brews. Not bad…just nothing new or interesting. Just an APA take on it.
Did enjoy the richer meatier body; somewhat cask-like.

Draft pout into a stemless wine glass at the brewery.
L: Hazy pale straw, 1/2” white head with good retention, a bit of wet lacing.
S: Light citrus nose, hints of stone fruit, more juicy as it warms.
T: More hoppy and bitter than juicy with a light pale malt base, grapefruit and tangerine peel, moderately bitter citrus peel finish.
F: Light bodied, fairly soft and a touch creamy with carbonation slowly building an edgy finish.
O: Good light citrus forward APA.
