TIPA DDH with Citra and Mosaic Cryo.
Citra and Mosaic are two of our favorite hops. Together they provide an intense aroma of green pineapple, melon, and grapefruit. 50% of our 6 lbs per barrel triple-dry-hopping was with Citra and Mosaic Cryo. Yakima Chief creates Cryo by removing half of the green hop material. The name comes from chilling with liquid nitrogen to prevent the aromatic oils from volatilizing. The result is the equivalent of 9 lbs per barrel of dry hopping and one of our most aromatic TIPAs!

Grabbed a can at Sapwood. Excited to try this massive IPA with some of my favorite hops. Opened/poured into Sapwood stemless glass. Absolutely gorgeous fluffy 2+” white head that slowly dissolved with excellent lacing, surface foam and halo. Hazy straw/lemon yellow color was bright to light; very slightly dulled and murky without. Promised aromatics did not leap from initial can opening or after pour in glass. To be fair it was my 72yo nose, and corresponding scents from the hop bill did emerge as beer warmed and beer consumed; permitting more esters to expand in the glass. But not much “wow”. Scored a bit higher accordingly.
Taste was very good; consistent with Citra, Mosaic and a background biscuit like malt. Enjoyed…yet nothing really to distinguish from many similar combos of these hops. Beer tasted better before warming where some dank pushed away the fruit. Body was very smooth, lightly creamy and just nice bit of carb bite. Very nice at first, but seemed heavy as beer consumed and lost its chill.
Overall, still a very good brew from true mastercraft brewers. But much as I LOVE big creamy DIPAs (eg see Daydreams) and super hoppy TIPAs… this one just seemed a bit awkward.

16 ounce can poured into a snulip.
CANNED ON 05/13/25
L: Hazy straw-yellow, one inch white head, medium density foam has good retention and leaves some sticky lacing.
S: Opening whiff of juicy stone fruit, more mango specific after a while.
T: Juicy stone fruit hops and moderately bitter melon rind flavor to open, alcohol and peach flavor on the back, hints of pale malt as the stone fruit carries right through.
F: Medium bodied, moderately carbonated, works up a light creaminess, finishes with some warmth and a small prickly bite.
O: Very easy drinking g for its ABV, good nose and flavor, leaves me wanting a second pour.
