Dregs started its journey as our Baltic Porter that we laid down in apple brandy barrels for over 18 months with our house cultures which we then refermented on plums. We took the resulting beer and racked it on to Branch Street Yirgacheffe coffee beans, fresh vanilla beans, cacao nibs, and rose hips. The result is a wildly complex strong dark sour with a firm acidity balanced by a malty backbone. Ripe dark fruits mingle with fresh roasted coffee that is rounded out with notes of vanilla, tobacco and oak.

Muddy mahogany brown with a moderate tan foam head settling to a spotty film and bubbly uneven collar leaving random dots of chunky, bubbly lacing.

Wow...if I've ever experienced a pastry oud bruin, this is it.

It's got those sour brown notes of crabapple and char with a little balsamic, but those are instantly subdued by mocha, chocolate syrup and vanilla whip. However, it whips back into char and sour dark cherry, swirling back and forth in a very unusual way. As it warms, the mocha leads into hints of maple.

The silky medium body has a light, sharp carbonation leading into a biting semi-dry finish with a little heat and a small acidic sting, but this one isn't too sour.

It's even more perplexing than the last Noble Creature bottle we opened! While intriguingly enjoyable, I'm not sure what to make of the viability of doing this kind of experimentation unless it's only sparingly rare.
