Pastry Mode is a full blown Pastry Stout. It started out with a heavy caramel malt forward grain bill and was boiled for 6 hours. After fermentation was complete the beer went through our centrifuge and was then treated with over 1 lb per bbl of raw coconut, .6 lbs per bbl of vanilla beans and finished on hazelnut coffee. This beer is insanely aromatic and should be enjoyed with good company.

Snuck over to North Park for a last hurrah before my wife and daughter got back from vacation. Had been wanting to have this one for a long time so was excited to see it at North Park. Poured a pitch black color with one finger of khaki tan frothy-to-fizzy head when I got it. Calm setting underneath. Very good lacing. Outstanding retention. (Sight - 4.00)
Smelled coconut, chocolate syrup, vanilla, hazelnut, wood, Almond Joy, coconut macaroons, hints of licorice and bark. (Smell - 4.50)
Tasted almost as good as the nose. In order got coconut, milk chocolate, vanilla, hazelnut, wood, Almond Joy, coconut macaroons, light toffee and hints of licorice. Super smooth for 12 pct. ABV. (Taste - 4.50)
Medium body. Sticky texture. Soft carbonation. Long, smooth finish. (Feel - 4.75)
Almost as good as I hoped it would be. A world-class pastry stout. (Overall - 4.50)

September 2021 batch! Sweet milk chocolate, hint of coconut, and prominent hazelnut mocha coffee nose on this one! Yowza! Fantastic aromatics! Taste follows with a soft/melted milk chocolate and hazelnut vanilla coffee bitter finish. This batch is a little more chocolate/hazelnut/coffee forward...and I'm noticing a little less coconut this time around. It is still an absolutely outstanding stout!
