i so rarely like clean saisons as much as i like the rustic and funky ones, if they get too refined, they often just turn into belgian pales and blondes, and to me thats a turn off when its called saison most of the time, but here is a beer dubbed saison that is neither funky nor particularly old worldy, yet it also really impresses me as something a little different. its the fermentation profile i always look to drive this style, and this one is pretty clean and simple, a french type saison with a neat and subtle fruity ester, from green pear to white wine to even elderflower or something botanical like that, its drying and fragrant and flavorful without really taking over much, it sets this up to be quite delicate, and i like that a lot. the grain is really simple and light, soft on the wheat, golden in color, only ever so slightly hazy, and holding a rich frothy airy white head that leaves pretty lace in its wake. dry and cerealy, but minimal too. floral european type hops are subtle, but i think its what takes this there for me, id be ballsy to guess a french aramis type, but thats what it seems like to me, floral and herbal, lower alpha, tea-like, and fast. carbonation is high, which i love in this style, and the esters of the yeast dont linger long enough to totally define this. the quality here is fabulous.
