reading about this beer now makes it sound quite complex and process intensive, but it drinks like a mellow, slightly funky young saison with a little herbal nuance. apparently its fermented with both brett and saison yeast, and spiked with ginger, orange, and shiso. i didnt get all of that in here, not at all, but i like how its funky and clean at the same time, and i was impressed with the quality overall. its incredibly pale in color, lighter than yellow, bright but not all the way clear, and has a full inch of white head from the tap with nice retention. at first i almost think it to be on of the new low calorie beers that are sweeping the craft world right now, its that light and clean, almost overly minimalist, especially in texture. definitely herbal to me, not sure shiso specific, but its distinct and good. the brett is a little musty and wet, but the funk is light and the french type saison yeast keeps this bright and tidy and dry as can be. i get very little from the malt, which is a shame because its apparently locally produced, but its almost thin and watery in feel to me, even with the high carbonation, there just isnt much happening on the grain side, almost like its rice rather than barley based or something. the mix of brett and saison yeast is successful, but more time to develop the funk would improve this i think. subtle on the ginger and orange too, but this is summery overall. cool beer, these guys are ahead of the game, and it seems like their beers are getting more and more ambitious. this drank in four or five pulls, a crusher even being more complex than most. well done.
