The Brut IPA is a new style of IPA originating from San Francisco. The characteristics of a Brut IPA feature a massive hop aroma and flavor upfront that fades into a bone-dry finish. Unlike typical IPAs, the Brut lacks the bitterness you’d expect to find. Our interpretation features El Dorado, Idaho 7, and Simcoe hops producing a candied mix of tropical fruits.

The hops, they do not pop.
Four pack from the brewery, switched from stout at staff’s recommendation.
Pours a murky dishwater brown orange, ample foam and chunky lace.
Smells like 2 row malt. Not getting much hop character, just tea and cereal.
Bland and dull taste, flat malt and slightly astringent. Vague herbal hop like a California APA from 1993. Medium bodied with ample carb, some candied citrus as it warms. Overall this beer is a failure as a Brut IPA, nothing about it is appealing, it smells and tastes malty and feels unfinished. Avoid.

A little haze and plenty of foam on the light amber brew. Hops are listed as Eldorado, Idaho 7, and Simcoe. I wonder what happens to the flavor? It starts out with a hint of fruit, then fades to a bitterish stew. For such good hops the aromatics don't amount to much and seem to fade as well.

This is the flavor that has become a classic in such a short time: some cereal, dry indeterminant hops, and that scratchy bitterness that tastes like too much yeast to me. From the 16 oz can purchased at the brewery on Ravenswood.
