It’s pretty much a dead cert at this point that when we bring a new and exciting hop into the brewery we’ll start it out in a kick-ass pale ale to test the idiosyncrasies and quirks that make our hop bills the most complex and diverse ingredient that goes into making a Polly’s beer.
Reeled back enough to not blow our palates, but with enough mouthfeel and flavour intensity to really showcase new kid on the block to Polly’s Motuere. A high alpha hop variety, we love how it expresses bright and characterful passionfruit and grapefruit notes, with an underlying spiciness backed up with resinous pine undercurrents.
Wanting to team this up with some seriously big hitters, we’ve gone for a NZ/US hybrid pale ale and brought in house favourites Citra and Simcoe to rep the States, whilst Wai-iti makes it a doubles showing for New Zealand to boot. Soft and delicate mango, pomelo and stone fruit notes, with a fresh splash of lime juice compliment the big hitting notes of this wonderful variety fresh off the boat from the South Pacific.

I'm starting to like Polly's, a lot... especially for this being only my second brew. The first was a nice NEIPA that Mikeller & Friends had selected that helped me understand why British IPAs are more modest... and drinkable IMHO. The second, Our Woods, helps me understand what Brits can teach North Americans about APAs (again, moderation is the key factor.)
I bought this 16 ounce can from a large M&S with a selective beer section; indicating to me that their criteria are not just shelf velocity but also quality. Our Woods Looks Great with a generous head and active foam. in a glass with lots of lovely lace. Our Woods Smells like a NEIPA, more tropical than Northwest pine. Tastes are reasonably well balanced, given that the bitter comes on strong at the finish. Medium-mouthed.
I also like Polly's Brew because they names their beers more thoughtfully, some even poetic. We know well how micros naming tends to be too cutesy or not funny or often just plain rude. So Polly could teach them some manners also. For good manners and bringing 21st Century culture to northern Wales, I give Polly's excellent Overall Hugs.
