Do you remember the first bottled wild ale we released called The Waves Have Come? What The Waves Left Behind is the same base beer aged 28 months in different red wine barrels with various strains of lactobacillus & brettanomyces. Rather than dosing the barrel-aged beer with a little pomegranate like we did for The Waves Have Come, What The Waves Left Behind was aged on second-use Pinot Noir grapes after using the grapes for Terrior Villein, the Wine/Saison hybrid we released earlier this year.
The result is a very complex wild ale with impressions of dry rosé, pear cider, bright lemon zest, oakey hay, light to moderate funk & acidity. Bottle Conditioned. Bottled February 2021.
