as a simplified american type saison thats more beligan yeasty than rustic or funky, this is a pretty well made beer, but this is not the kind of saison that has been turning me on lately, and it seems less evolved and nuanced from a yeast standpoint than i like in the style. that said, its got a nice fresh and full wheat malt base and body, feels substantial while also being dry and bubbly and light in that way, the right texture for the style for sure, and fresher tasting on the grain front than many. its got a light ester profile of green apple and dried apricot, a little sweet and a bit vinous, classically belgian, pleasant, with a little of the twang of a basic french farmhouse yeast as well, basically the same stuff we can get at the homebrew shop it seems to me, but its fermented down to near dry and not done too warm. simple beer in a lot of ways, summery, but as much like a classic wit as it is a saison, minus the orange and coriander. fine beer, but my least favorite of the three i had from these guys...
