Crafted to create an aromatic fermentation profile by comingling Brettanomyces with Sauvignon Blanc wine yeast. It is then aged for 6 months in red wine barrels, blended for balance and refermented in the bottle. The result presents effervescent hints of guava, passionfruit, and grapefruit.

i think these guys are doing as well with the wine hybrid beers as anyone in the game, i have been impressed with all ive had, and i found this particularly unique with the funky yeast, the wine yeast, and the wine barrels, a whole lot going on but also a cohesive and drinkable beer overall, with somewhat tame acidity, lots of oak but light on the grain, and a neat wet juicy complexion that makes it seem like it has white wine grapes actually in it, very cool little beer here. pale golden, short white head, off clear, a saison type base to me, some dry wheat and pils malt i think at the core of this, young farmy brett with a light spicy ester up front, but as it warms a little more citric sharpness and tangy wine character, the sauvignon blanc yeast does a lot in here, a lead flavor agent to my palate for sure, and this hits in nose and taste with plenty of green grape, meyer lemon, lime leaf, and cut flowers, fresh and verdant. the red wine barrels are cool too, a slightly generic berry aspect, subtle vanilla richness from the wood, and it seems to enhance the funk as the temperature comes up. this has a cool fruitiness, almost seems like a modern dry hop on it with all the vinous and herbal layers, and it is slightly sweet at the end, but i love the aftertaste, such a cool fermentation profile. enough carbonation, pretty light in body for what it is, lots of subtleties to this. really clever and good, these guys are on a roll with this kind of thing, loved this!

One inch of white foam holds for about a minute before diminishing to a transparent, rocky ring. Ultimately, there is no lace above this clear, pale straw (SRM 2) beer. The glint of random carbonation provides some interest.
The aroma starts off similar to fruity white wine with ample funky yeast. A farmyard is evoked before notes of lime and flowers build as it warms.
The balance is appropriate between acidity and sweetness. Fruity white wine flavors are pronounced, yet delicate. A grapefruit juice wine comes out with warmth before a long, dry finish.
Surprisingly light carbonation. Alcohol is above expectation in this medium bodied beer with a smooth metallic texture. It is quite dry.
