This Imperial Stout was brewed in collaboration with a founding member of the Flour City Beer Appreciation Association. Inspired by the flavors of a mexican cookie, it contains locally roasted Dominican cocoa nibs, Ceylon cinnamon sticks, dried ancho peppers, and a blend of Madagascar/Mexican vanilla beans. Then, it was aged 13 months in an Elijah Craig barrel. It provides a balanced flavor with a medium body and cinnamon/chocolate undertones. Finishes with just the right amount of heat that builds.

This one pours a fairly dark black color, with a small head, and not much lacing.
This smells like sweet milk chocolate, cinnamon, creamy vanilla, dark chocolate, cookie dough, bourbon, oak, and a hint of pepper.
There's only a hint of pepper on the nose, but it's significantly more forward in the taste. This is much, much spicier than the base stout was, for whatever reason. That kick of heat does do a lot of heavy lifting in terms of taming the big sweetness otherwise. There's not too much cinnamon, and waves of milk chocolate, and vanilla. The barrel gives off spice and almost cookie-dough and graham cracker like flavors - maybe that's just the name tricking me into thinking about cookie-like flavors.
This is thick and creamy, with no real booziness, and a definite lingering heat on the back end.
This is one of the more intense barrel-aged beers from Mortalis so far, for a different reason than the usual big sweetness that you expect. This is a spicy beast, and will only really be enjoyed by people who really like spicy stuff.
