This Imperial Stout was brewed in collaboration with North Park Beer Company. The base was aged for 14 months in both Old Rip Van Winkle and Heaven Hill 17 year barrels and then conditioned on cacao nibs, Madadgascar, and Vanuatu Vanilla. The full body is met with waves of fudge, creamy sweet vanilla, and toasted oak.

Sweet milk chocolate/fudge brownie malty, creamy vanilla, and a balanced bourbon barrel nose on this one! Taste follows with a milk chocolate, floral vanilla, and a warm, vanilla-bourbon barrel finish...bourbon warmth lingers a bit. Fantastic!

Another solid BA offering. Balanced, maybe too balanced? The barrel aspects come through well, though the adjuncts hide and blend to where they’re whispers of what they could be. To that end, it’s dessert like, but not over the top. PVW profile is prevalent, slightly mellowed by the HH.

On tap at Mortalis Brewing in Avon, NY.

This one pours a very dark black color, with a very small head, and no lacing.

This smells like sweet and fudgy dark chocolate, cookie dough, cakey vanilla, caramel, oaky spice, coffee, and bourbon.

This has much more barrel than Mortalis barrel aged beers have had lately, for the most part. There’s a nice oaky spice on the finish, some bourbon warmth, and some caramel mixing in with the wonderfully fudgy character of the stout itself. There’s definitely a sweet vanilla note, but it manages to be nicely balanced.

This is definitely a sweet beer, as is the recipe for Mortalis stouts, but it does manage to strike a more enjoyable balance than some of their more sweet stouts.

This is one of my favorite Mortalis stouts in a while – I love the barrel character and I hope this starts a trend.
